Nancie's 1 hour Bread Recipe
makes 3 loaves of bread
Dry ingredients Wet ingredients
2 cups white flour 3 cups water (114 degrees)
1 teaspoon dough enhancer (optional) 6 Tablespoons melted butter (<114 )
2 Tablespoons yeast 1 cup of honey
7 cups whole wheat
1 Tablespoon salt
Directions
combine all dry ingredients
add liquids on top of dry ingredients and mix for 10 minutes
dough will be very sticky form into 3 loaves. Put loaves in well greased loaf pans let rise 30 minutes. Bake at 350 for 30 minutes. Promptly remove bread from pans and rub with butter if desired.
I think there are two secrets to 1 hour bread. The first: make sure your dry ingredients are mixed well almost sifted (salt kills yeast). The second secret is mixing all ingredients for 10 minutes. I have made 1 hour bread twice the first time I thought it looked well mixed after about 5 minutes but it did not raise so well. The second time I made 1 hour bread I mixed the dough for the full 10 minutes and had better results.

Ingredients preheat oven 350 degrees
3 cups 114 degree water 2 Tablespoons yeast
1 cup honey divided 7 cups wheat flour
2 cups white flour 6 Tablespoons melted butter (<114 )
1 teaspoon dough enhancer (optional) 1 Tablespoon Salt
Directions:
In a large bowl add 3 cups hot water, 2 Tablespoons yeast, ½ cup honey. Mix and let stand about 10 minutes. Then add 4 cups whole wheat flour and mix for several minutes. Cover with towel and let dough rest about 30min. After 30minutes add ½ cup honey, 6T butter, 3 cups wheat flour
2 cups white flour mixed with 1 tablespoon salt and 2 teaspoons dough enhancer (optional)
Mix until a soft non sticky dough forms. Cover with a towel and let rise until double in size about 30 min. Divide dough in thirds and shape into loafs Cover bread pans with a towel let rise about 30 min. Preheat oven to 350 degrees. Bake for 30 minutes. If you like you can butter the top of the hot loaves.
